What to Plant This Fall for a Winter Harvest



Just because the weather cools doesn’t mean gardening has to stop. Fall is the perfect season to plant hearty greens, root vegetables, and herbs that thrive in cooler temperatures. Here’s a simple guide to keep your garden producing through the winter.


1. Focus on Cold-Hardy Crops

  • Kale, spinach, collards, and Swiss chard thrive in cold.

  • Carrots, beets, and radishes can be left in the ground and harvested as needed.

  • Garlic can be planted in fall for a summer harvest.



2. Add Row Covers or Tunnels

  • Lightweight fabric keeps frost off and adds a few extra degrees of warmth.

  • Perfect for extending fall crops into early winter.



3. Mulch & Soil Protection

  • Thick layers of straw, leaves, or wood chips insulate soil.

  • Prevents roots from freezing and extends harvest windows.



4. Succession Planting

  • Keep sowing quick crops like radishes and lettuce every couple of weeks until frost.

  • You’ll always have something coming up, even as temperatures drop.



5. Use a Greenhouse or Cold Frame

  • Protects plants from frost and wind.

  • Great for greens, herbs, and hardy root crops.

Perfect for small pots on a sunny sill. Fresh herbs brighten up winter meals.

 

 

2. Lettuce & Microgreens

Fast-growing, nutrient-packed, and easy in shallow trays. Ready to harvest in 10–20 days.

 

 

3. Green Onions (Scallions)
